My crop of Chillie Peppers - great or what!

Just picked the majority of my crop, grown in a mixture of green house and garden here in Harpenden just north of London in the UK.

Its the effort of about 8 plants at a price of about £1.50.

I know the small ones are lethal as my wife made a big pan of soup and only put one in there and it was really hot :).

Anybody got any ideas what to do with them? I'm going to try and create some chillie oil by putting some in olive oil.

I found that you need to dry out the chillies before putting in the oil otherwise the green bits of the chillies go mouldy.

I just keep toping up my chillie oil, it gets more red each time. I just use bog standard olive oil, Extra Virgin would be strong with the chillies.

You can also roast the chillies in oil and preserve that oil, to get a slightly different flavour.

Yes, roasting the chillies makes a huge difference, it also dries them and makes them last longer.

How to roast them?

Use a dry non-stick pan (teflon wins), heat it up, then put whole peppers into the pan, stir-roast for 2 to 3 minutes. Make sure you don't burn them. And try not to inhale too much of the fumes, as it could make you dizzy. ;)

Drown them in olive oil while they're still hot.
